Here is a very easy way to start. Say you are going to make meatloaf for dinner. Just make triple the amount you usually do. Have 1 for dinner Bake the second one too and freeze, to take out later for sandwiches Freeze the third one raw. The easiest way to do this is to put it in a ziplock bag and flatten it. When you are ready to use, it will thaw in no time. Just put in your pan when thawed and bake. Having mashed potatoes with that meatloaf? Triple the amount again. If you use milk in your potatoes, cut back on it as it will make them runny when you thaw. Put in ziplock bags in meal size portions, flatten and freeze. Now you have mashed potatoes to go with any meal. OAMC is really cook once eat many times. If you do this for a week or two when making dinner, you will have some fantastic meals all ready to go right in your freezer. Cheaper and much healthier than eating out and if the item is pre-cooked even your kids can microwave them for a healthy meal.

Deed, I find it easier to cook all three meatloaves, the second two only about 3/4 of the way of course so that when you place in the oven to thaw it finishes the cooking process and doesn't dry out.

Good idea Ellise, you're right I have found that meatloaf does dry out when reheating. Thanks ;D

I cook mine for about 35-40 minutes of the hour needed then when I reheat I cook for an additional 20-30 minutes and it is juicey.

I wonder if I am put off by it because we have 7 people to feed? It is hard to know what kind of volumes other people are dealing with.
Is a microwave a good way of reheating meatloaf?

br, I reheat meatloaf in the microwave. Just be sure not to cook it too long as it will dry out in the micro also.

br I cook for 3 of us but usually have 4 people here to eat. I do reheat in the wave but I don't cook my meatloaf (ones to be frozen) all the way so popping it in the oven is always just as easy.
