What a great recipe to use up odd potatoes or left over cooked potato.
I must admit I hadn't heard of it, but it looks delicious!
Skordalia
2 desiree potatoes (about 350g) peeled and halved 80g (1/2 cup metric) pine nuts 8 cloves garlic, peeled and chopped 2 1/2 tablespoons lemon juice 160ml (2/3 cup) extra virgin olive oil
Cook potatoes in boiling salted water until tender, then drain well and cool. Using a potato ricer or mouli, (fork?) finely mash potatoes (alternatively, push potato through a coarse sieve) into a bowl. Using a food processor, process pine nuts, garlic and lemon juice until a smooth paste forms, then add to potato and stir to combine well. Add olive oil a little at a time, stirring well between each addition, then season skordailia to taste with sea salt and black pepper. Skordalia can be made a day in advance and will keep, covered in the refrigerator, for up to 4 days.
