Parsnip JamThis jam tastes very much like marmalade. It is also nice with two or three tablespoons of grated green ginger added. Ingredients 750g (1½ lbs) parsnips, peeled and finely chopped Juice and rid of 2 lemons 1 litre (2 pints) water Method Place the prepared parsnips, water, lemon rind and lemon juice in a pot. Cook until the parsnips are tender. Add the sugar and bring to the boil, stirring (make sure the sugar is completely dissolved before it comes back to the boil). Boil for approximately 45 minutes or until setting point is reached. Remove from heat and allow to stand 5 minutes. Pour into warm sterilised jars and seal immediately.
