Kabana is a sausage you can eat with cheese etc. I have some in the fridge. Usually we use it to make paella. We have no bbq chicken so I have to use it for something else. Yes, I know we could eat it for afternoon tea.
Pasta Alajamala
Serves 2
You need:
1 kabana, sliced
6 thick slices of ham, sliced into bite sized pieces
1 small onion, finely chopped
¼ cup grated cheese
Salt and pepper
½ cup cream
Penne pasta
Method:
Cook the pasta as per instructions.
In a frying pan, toss in the onion and fry in butter for a minute before adding in the kabana and ham.
When the kabana is browned and the ham heated through, turn the heat down low and stir through the cream and cheese, being careful not to bring to the boil.
Drain the pasta and stir into the sauce
Serve immediately

Kabana Casoulet
Serves 6
Makes 6
Prep Time 10 minutes
Cooking time 45 minutes
You Will Need
1 x 300g pkt KR Castlemaine Kabana
1 tblsp oil
1 Onion, finely chopped
1 clove Garlic, crushed
1 Red Capsicum, diced
1 x 800g can 4 bean mix, washed and drained
1 x 800g can diced Tomatoes
0.5 cup Red Wine
0.5 tsp mixed herbs salt & pepper to taste
Method
1. Slice KR Castlemaine Kabana into thick slices diagonally.
2. Heat oil in a large saucepan or frying pan and sauté kabana, onion, garlic and capsicum 4-5 minutes.
3. Stir in the beans , tomatoes , tomato paste , red wine & mixed herbs and simmer over a low heat 40 minutes.
4. Season to taste with salt & pepper serve hot with wedges of fried polenta or crusty bread.
