Easy Apple Pie
The judges in our 2006 apple dessert contest found this to be
the best entry of all. Try it and see what you think.
Ingredients
5 apples, or more if needed
handful of fresh cranberries (optional)
½ cup sugar
½ tsp. cinnamon
1 egg, beaten
½ cup sugar
6 tbs. butter, melted
¾ cup flour
1 tsp. vanilla
½ cup chopped pecans or walnuts
Directions
Preheat oven to 350 degrees.
1. Fill a nine inch pie plate even with brim with thinly sliced apples.
2. Add cranberries, if desired.
3. Mix ½ cup sugar with cinnamon and sprinkle over apple slices.
4. Combine egg, remaining sugar, flour, butter, vanilla, and nuts.
5. Spread mixture over apple slices.
6. Bake in 350 degree oven for 50 minutes or until lightly browned.

Nonna Maria's Spaghetti Alla Puttanesca
INGREDIENTS
* 400g Spaghetti
* 1 can Plum Tomato (With Juices, Roughly Chopped)
* 4 Fillets Anchovies (Roughly Chopped)
* 1 tablespoon Caper
* 12 Black Olives (Pitted)
* 1 cup Walnut (Roughly Chopped)
* 2 Garlic Cloves (Crushed)
* 4 tablespoons Extra Virgin Olive Oil (60ml)
* Fresh Flat Parsley Leaf (Finely Chopped)
* Salt & Pepper (Fresh Or Dried To Season)
Method
1. While your spaghetti cooks in salted boiling water, prepare your sauce.
2. Heat up some olive oil in a large saucepan.
3. Add garlic and chili peppers. When garlic is golden, add anchovies, olives, capers and walnuts.
4. Let cook for a few seconds before pouring plum tomatoes into the pan. Cook for approximately five minutes.
5. About a minute and a half before the al dente stage, drain the spaghetti and add it to the saucepan, allowing it to finish cooking in the sauce.
6. Sprinkle freshly chopped parsley and plate. Serve immediately.
