Easy No-Peel Applesauce(using Foley food mill to remove peel) ½ to 1 peck of apples 1 to 2 c. water, enough to prevent sticking Cut apples into quarters. Cook over medium heat or microwave until apples are soft. Stir frequently. Transfer portion of cooked apples to Foley food mill. Sieve. Discard skins and repeat until all sauce is processed. Add sugar and cinnamon to taste. The applesauce will be creamy and will be colored by the skin of the apple. Use a red apple (Jonathon or Ida Red) for a pink sauce.
