Outback Tuna MornayDegree of difficulty: Medium Preparation Time: 15 minutes Cooking Time: 20 minutes You need: 425g tin of tuna 1 cup of breadcrumbs or rice lemon juice from 1 lemon 4 hard boiled eggs ½ cup of grated cheese salt and pepper To make the sauce 60g of butter 1 onion 4 tablespoons of plain flour 2 ½ cups of milk Topping 4 sliced tomatoes ¼ cup of fresh breadcrumbs (Peter suggests using packet potato chips instead) ½ cup of grated cheese 2 teaspoons of dried basil 1 tablespoon of butter Method: Drain the tuna and flake it into a bowl. Cut the eggs into quarters and add to tuna. Add breadcrumbs (or rice), lemon, cheese, and salt and pepper. Melt the butter in a large frying pan. Add chopped onion and cook. Stir in the flour and cook for 1 minute. Stir in the milk while the pan is removed from the stove. Bring mixture to the boil and stir until thickened. Add the tuna mixture and pour into a greased ovenproof dish. Slice tomatoes on top of the mixture and sprinkle with breadcrumbs, cheese and basil.
