In Australia we use sausage mince half and half with normal mince or hamburger to make meatloaf. Usually it just sat in the freezer and eventually we made meatloaf for some reason.
Have you ever tried to find sausage mince recipes on the net. Not an easy thing. Although sometimes when you try the search again for things you find heaps of new things.
Now we make a meatloaf just with sausage mince that I found on one of those searches. I posted the link once but this time I will post a recipe. Both of these are related to TV shows.
Savoury Sausage

Ingredients: 1 kg Sausage Mince
3 tablespoon crushed cornflakes
1 small onion (finely chopped)
1 tablespoon Worcestershire sauce
1 425g can creamed corn
2 tomatoes finely sliced
125g grated cheese
Salt and pepper
Method:
Mix Sausage mince, crushed cornflakes, Worcestershire sauce & onion together.
Press into 16cm x 26cm (appr) baking tray.
Arrange finely sliced tomato over meat.
Spread creamed corn over tomato and then top with grated cheese.
Season with salt and pepper.
Bake in moderate oven (180 deg) for approx 1 hour.
Cool slightly before serving.

Meatloaf
ep 11 - meatloaf
Ingredients
*500g sausage mince
¼ tsp ground black pepper
1 teaspoon sea salt
2 tablespoons Tomato sugo
2 tablespoons barbecue sauce
2 tablespoons Tomato & chilli sauce
2 tablespoons Cabernet sauce
1 tablespoons worcestershire sauce
1 medium finely chopped onion
2 tbsp chopped fresh herbs (marjoram/parsley/thyme)
Maggie also added some dried chopped mushrooms (optional)
1 Egg
* If you want to use minced lamb or beef instead of sausage mince, remember to add some fatty bacon for extra lubrication.
Method
Mix all the ingredients together by hand. Shape mixture and roll mixture in flour before placing in a loaf tin. Press down firmly. Bake at 180C “intensive bake” for 40 minutes.
Internal temperature 80C.
Serve with some Tomato Sugo
Tomato Sugo (served with Meatloaf)

Ingredients
20g butter
40-50ml extra virgin olive oil
Sugar
1 large brown onion, chopped
2 cloves garlic chopped
1/3 cup Red wine vinegar
2 x 220gm tins whole peeled tomatoes
Method
Melt butter & extra virgin olive oil, add onions / garlic & caramelise then add vinegar & reduce
Add 2 x 220g tins whole peeled tomatoes
Bring back to the boil and hold for 3 minutes
Add 7ml salt and 2.5ml sugar, season with ground black pepper
reduce heat for 5 minutes
reduce heat to slow simmer for 15 min until sauce is thick and most liquid
has been reduced.
Total cooking time – 35 minutes
