Do you like chai tea? I was a bit put off by the name. But I bought some, and today tried it. It is a joy to have the open box in the cupboard without the plastic wrap over it. It reminds me of my Nana's baking.

Chai Tea Christmas Cake
Serves 6-8
2 Twinings Chai tea bags 1 cup (250ml) boiling water 1 cup (220g) caster sugar (superfine?) 1 teaspoon salt 1 teaspoon bicarbonate of soda (baking soda) 1 teaspoon mixed spice 60g butter 1/4 cup (55g) glace ginger 1/4 cup (200g) dried mango, chopped 1 egg 1 cup (150g) self raising flour 1 cup (150g) plain flour 1/2 cup ( 55g) whole blanched almonds
Preheat oven to 180oC. Lightly grease a 19cm sqaure cake pan, and line with baking paper.
Infuse tea in boiling water. Remove tea bags.
Combine tea, sugar, salt, bicarbonate of soda, mixed spice, butter, ginger and mango in a large saucepan. Cook, stirring, over medium heat until butter melts. Set aside to cool. Stir in egg, then fold in the flours until combined.
Spoon mixture into prepared pan. Arrange almonds decoratively on cake. Bake for about 1 hour or until a skewer inserted into the centre comes out clean. Stand for 5 minutes before transferring cake to a wire rack to cool.
