Sausages on Capsicum Couscous with Onion Gravy
Serves 6.
2lbs beef sausages (preferably with pepper, white or black pepper not capsicum or chili) 10 1/4oz San Remo cous cous a little more than 1 oz butter 1 1/3 pints (US) boiling water 5oz chargrilled marinated capsicum, thinly sliced (I get a jar to keep in the fridge) 1/4 cup coarsely chopped fresh continental parsley pinch of salt 1 brown onion, halved, finely chopped 2 garlic cloves, crushed 1 tab plain flour (all purpose?) 1/3 cup dry red wine 1 1/2 cups beef stock or slightly more 2 oz baby rocket leaves to serve.
Heat a skillet over medium high heat. Add sausages and cook until brown and cooked through. Put on plate covered with foil to keep warm. Meanwhile, place the couscous and half the butter in a large heatproof bowl and pour over boiling water while stirring with a fork. Cover with plastic wrap and set aside for 5 minutes or until all the liquid is absorbed. Use a fork to separate the grains. Add the capsicum and parsley and stir until combined. Taste and season with salt. Cover with foil to keep warm.
Melt the remaining butter in the same skillet over medium heat. Add the onion and garlic and cook stirring for 3 minutes or until onion softens. Add flour and cook, stirring with a flat edged wooden spoon, for 1 minute or until mixture boils. Gradually add the wine and cook, stirring, for 2 minutes or until mixture boils and thickens. Gradually add the stock, stirring and bring to the boil between additions until stock is incorporated and gravy thickens. Taste and season with salt. Spoon couscous among serving plates. Add arugula and top with sausages. Drizzle with onion gravy and serve immediately.

Easy Sausage PieIngredients (serves 6) * 3 teaspoons olive oil * 1 brown onion, coarsely grated * 6 thin beef sausages * 1 carrot, coarsely grated * 2 zucchini, coarsely grated * 1 cup grated tasty cheese * 1/2 cup plain flour * 1 1/2 cups milk * 3 eggs Method 1. Preheat oven to 160°C. Grease a 4cm deep, 17.5cm x 24.5cm (base) baking dish. 2. Heat oil in a frying pan over medium heat. Add onion. Cook, stirring often, for 2 minutes or until soft. Remove to a bowl. Add sausages to frying pan. Cook for 6 minutes, turning, or until cooked through. Set aside to cool for 5 minutes. Thinly slice. Spoon sausages, onion, carrot, zucchini and cheese over base of baking dish. 3. Whisk flour and milk in a bowl until smooth. Add eggs, and salt and pepper. Whisk until well combined.
