Sausages with tomato, red onion & mashed potatoPreparation Time 15 minutes Cooking Time 20 minutes Ingredients (serves 4) * 4 medium (about 800g) brushed or Pontiac potatoes, peeled, roughly chopped * 8 (about 700g) pork Old English sausages * 2 garlic cloves, crushed * 2 medium red onions, peeled, thinly sliced * 1 400g can whole peeled tomatoes, undrained, roughly chopped * 1 tsp dried oregano leaves * Salt & ground black pepper, to taste * 20g (1 tbs) butter or margarine * 60 mls (1/4 cup) milk Method 1. Cook potatoes in a saucepan of boiling salted water for 12-15 minutes or until soft. Drain. (See microwave tip.) 2. Meanwhile, heat a large, non-stick frying pan over medium heat and cook the pork sausages, turning often, for 4-5 minutes or until browned. Drain on paper towel and keep warm. Remove excess fat from pan then add the garlic and onions. Cook over medium heat, stirring often, for 4-5 minutes or until onions are tender. Stir in the undrained tomatoes, oregano, salt and pepper. 3. Return the sausages to the pan, cover and simmer over medium- low heat for 6-7 minutes, stirring occasionally, or until sausages are cooked through. Meanwhile, combine potatoes with butter or margarine, milk and salt and pepper to taste and mash until smooth. Serve sausages with tomato and onion sauce plus the mashed potato. Notes & tips Microwave tip: Place potatoes in a medium microwave-safe bowl with 125mls (1/2 cup water). Cover with a lid or plastic wrap. Cook for 6-8 minutes on high/850watts/100% or until tender. Allow to stand for 1-2 minutes before draining. Gourmet tips: Use Bratwurst or Italian sausages. Serve sausages with soft polenta instead of mashed potatoes. Leftovers: Use leftover oregano in burger mixtures, marinades and stuffings for lamb or chicken. For the kids: Sausages in tomato sauce - cut the sausages into thick diagonal slices. BRATS AND BEANS 1 large can Baked Beans 1 lb bratwurst, in 2 inch slices 1 3 inch cube of salt pork, diced 1 large onion, diced 1 teaspoon Coleman's English Mustard 1 tablespoon molasses 1 tablespoon dry onion soup mix 3 tablespoons hickory barbecue sauce In a stove-top to oven baking dish, saute the finely cubed pork with the diced onion and sliced bratwurst until the onion is beginning to brown. Stir in remaining ingredients. Bake in a preheated 400°F degree oven for 30 minutes. Serve with your favorite ale. A hurry-up, flavorful version of an old-time classic.
