I use these mostly because they are readily available to me. We tried this recipe and I enjoyed it. Bean Stew with Pork SausagesDelicious and warming on a cold day. Easy to prepare and easy on your purse. 1lb good quality Pork Sausages 2 x 410g ( 14oz ) tins of Barlotti Beans, drained 3 large Carrots, cut into cubes 2 sticks of Celery, chopped 1 large Onion, chopped 2-3 cloves of garlic, crushed a few leaves of sage, chopped 2 Bay Leaves Salt and freshly ground pepper 1 heaped tablespoon of Tomato puree 570ml (1 pint ) of Stock 1 tablespoon of chopped parsley 1. fry the chopped onion gently 2. add the carrots and celery and fry gently for 1-2 minutes 3. now add the garlic and sage 4. put in the beans, stock and bay leaves 5. season to taste 6. bring to the boil and let it simmer gently for 35 minutes 7. fry the pork sausages in a frying pan, turning them, until cooked 8. add the sausages to the stew and simmer for another 10- 15 minutes 9. sprinkle on the parsley and serve with mashed potatoes or rice. I have a salad similar to this one that we use often. Warm Cottage Salad (Sausage)6 Country Style Pork Sausages 500g Tiny (chat ) Potatoes 300g Green beans , halved 100g Grape Tomatoes 150g baby spinach or rocket leaves 8 green olives 50g fetta cheese Dressing 1/2 cup quality Mayonnaise 2 tsp Lemon Juice 1 tsp Garlic Crushed 2 Tblsp warm water Place Country style pork sausages in a shallow frying pan and cover with cold water. Simmer gently for 4 minutes . Drain and cool slice into thick diagonal slices. Place potatoes in the base of a steamer and cover with cold water , bring to the boil covered and boil for 5 minutes . Reduce heat and place the beans in the top half of the steamer for further 4 minutes. Remove the pan from the heat and set the beans aside , potatoes should remain in the water covered for a further 5 minutes. Heat a large frying or griddle pan over a high heat and brown the sliced sausages well 2-3 minutes. Place the Spinach ,tomaotes, beans , crumbled fetta and olives into a large serving bowl and toss well. Divide the salad evenly onto serving plates. Arrange the drained baby potatoes and the browned sausages slices over the salad. Whisk together the dressing ingredients and drizzle over the salad just prior to serving. Last night we had this. We had planned pumpkin meals, I thought we could get four pumpkin meals out of the homegrown pumpkin, but as it turned out we only made two. The sausage meal was really lovely. The feta was a more sour feta, but still I enjoyed it a lot. We were able to use up the green beans, feta and rocket that we had over.

Spicy bean stew with sausagesHugh Fearnley-Whittingstall & Fizz Carr: The River Cottage Family Cookbook Serves 4 Ingredients 3 tbsp olive oil or vegetable oil 8 free-range pork sausages 1 medium onion 2 garlic cloves 400g/14oz tin cannellini beans 300g/10½oz kidney beans 1 tsp brown sugar ¼ tsp ground nutmeg ¼ tsp cayenne pepper ¼ tsp ground cloves 2 sprigs fresh thyme or ½ tsp dried thyme 2x 400g/14oz tin plum tomatoes salt and freshly ground black pepper baked potatoes or mash, to serve Method 1. Heat the olive or vegetable oil in a large heavy-based saucepan over medium heat. Add the sausages and fry them, turning them over until they are completely browned. Set them aside on a plate. 2. While the sausages are browning, peel the onion and garlic and chop them as small as you can. Drain the cans of beans into a colander and rinse them with cold water. 3. Add the onion to the pan, turn the heat down to low, cover the pan and sweat the onion, frying it gently in the pan for around 10 minutes, stirring from time to time so it doesn't catch on the bottom of the pan. 4. Add the garlic and fry for another couple of minutes. Stir in the brown sugar, the nutmeg, the cayenne, cloves and dried or fresh thyme. 5. Pour in the tomatoes and break them up with a wooden spoon or a potato masher. Add the sausages to the pan, along with the beans. Season with salt and freshly ground black pepper. 6. Give everything a good stir and turn the heat up to medium. When the stew starts to simmer, put the lid on, turn the heat down and let it bubble gently. Stir occasionally to make sure it isn't burning on the bottom of the pan. You can leave it for at least an hour and for up to two hours. 7. Serve with baked potatoes or mash. This was really nice. It was hard to coordinate things apparently and the sausages were boiled for a time so the sausage part was a little like the Aussie sausages with sultanas, well sometimes they are OK. It tasted a little like homemade tomato sauce. Very nice flavours with no additives except what was in the sausages that we used.
