I need to buy some more dashi. Here is recipe. DashiThis is a great Asian soup that takes literally minutes to prepare. Be careful not to overcook the rice noodles, they really need to be just heated through. The soup is light, yet very satisfying because of its fabulous flavours and you can add just about anything to it. Degree of difficulty: Low You need: 2 sachets of Dashi powder1-2 tablespoons of shredded ginger 1 tablespoon soy sauce Method: Bring 1 litre of water to the boil. Turn off heat. Add 1 tablespoon soy sauce and 2 sachets of dashi powder and stir. In a small soup bowl put shredded giner and pour in stock. Serving suggestion: For more substantial soup add to the bowl (before pouring in the stock): bean sprouts finely sliced mushrooms silken tofu - wither steamed or fried fresh rice noodles - heated steamed asparagus chilli Sprinkle finely sliced spring onion on soup. Per serve (when serves 4): 1505 kJ (359 cals) 13g protein 7g fat (99% fat free) 60g carbohydrate Ingredients: 400g of Kent or Queensland Blue pumpkin - peeled and diced 1 tbs peanut oil or light flavoured oil 2 shallots - trimmed and diced 1 bunch bok choy or choy sum - washed and roughly chopped 2 garlic cloves - crushed 2 x 200g packets of ready to use udon noodles 1/2 tsp sansho or white pepper Broth 4 cups water 2 teaspoons dashi granules 1 small knob ginger - peeled and diced 1 tablespoon light soy sauce Instructions: Heat water in a saucepan until simmering. Add other broth ingredients and keep hot over a gentle heat. Heat oil in a wok. Add pumpkin, garlic and sancho and toss to coat. Reduce heat and stir fry pumpkin until just cooked. Add Asian greens and shallots and toss until wilted. Divide broth and noodles between serving bowls. Top with stir fry ingredients and serve immediately.
