Creamy Chocolate Semolina
315ml milk 1 tablespoon cocoa 2 tablespoons sugar 2 tablespoons semolina few drops vanilla essence, optional 15g butter or margarine 1 egg, beaten
Blend a little of the milk with the cocoa and sugar to a smooth paste.
Bring the remainder of the milk to the boil, add the cocoa paste, stirring continuously and simmer for 2 minutes, until thickened.
Remove from heat, stir in the vanilla if used, and butter and beat in the egg.
Pour into a small pie dish and bake in a moderate oven at 180-190 degrees C for 25-30 minutes.
Serve hot or cold. Serves 2.
