I am not sure what they call that fish they sell in supermarkets here, but it yummy the way my Mum makes it. Here is another way, if it is the same fish. I think it is called Smoked Cod. SMOKED FISH AND KUMARA HASH CAKES Makes 8 700g kumara, peeled and cut in chunks 2 tbsp melted butter juice of 1 lemon 400g smoked fish, broken into flakes 4 spring onions, finely chopped ¼ cup chopped fresh parsley salt and freshly ground black pepper flour for dusting vegetable oil for frying lemon wedges to serve 1. Cook kumara in boiling salted water until tender. Drain well and coarsely mash with butter and lemon juice. Set aside to cool. 2. Combine flaked fish with kumara, spring onion and parsley. Season well with salt and pepper. Form mixture into eight patties. Dust patties with flour. 3. Heat a nonstick frying pan with a little oil and gently fry fish cakes over a medium heat for 3 to 4 minutes on each side until golden brown. Serve with lemon wedges. www.nzww.co.nz/food/story.cfm?storyID=3680467I found another recipe on the site, that seems to suggest it is already cooked, so probably not smoked cod.
