While I do not like smelly things like pot pourri in my house, I have dried orange peel for using in French Toast and breads. I grate it with a fine grater and let it air dry for a few days ( or until I remember to deal with it!) then zip it up ina baggie...you can even pop it into the freeze if you think it might get moist from alot of humidity.
