Mustard Choko PicklesMakes about 6 cups. 4 chokos, peeled and cut into 1cm pieces 2 large onions, sliced 2 tablespoons cooking salt 1 cup water 1 cup sugar 1/3 cup plain flour 2 tablespoons dry mustard 1 teaspoon ground turmeric 1/2 teaspoon ground cloves 2 cups brown vinegar 1/2 cup golden syrup Combine chokos, onions and salt in a bowl. Allow to stand, covered, overnight. Drain and rinse well under cold water. Place choko mixture in a saucepan with water. Bring to the boil. Reduce heat. Simmer, covered, for 15 minutes. Blend sugar, flour, mustard, tumereric and cloves with viegar and syrup. Stir into choko mixture. Bring to the boil, stirring. Reduce heat. Simmer, uncovered, for 30 minutes or until mixture is thick. Pour into hot, sterilised jars. Seal when cool.
