I came across an article in the newspaper of my State about brownies. I didn't know Aussie's were so much into them. I guess I still like my Nana's styled ones called Simplicity Chocolate Cake which she cooked like a brownie.
Here are the favourites that they chose after much tasting.
"Moosewood Fudge Brownies
The moist texture of these brownies makes a wonderful medium for their unadulterated chocolate flavour. Light brown sugar adds a real depth of flavour and prompted many of Anthony's colleagues to wonder whether the brownies contained alcohol. (Despite the source of the recipe, I assured them it contained no mind-altering substances.)
METHOD
· Preheat oven to 180C.
· Let soften: ½ pound (250g) butter, not melted
· Melt: 5 ounces (155g) unsweetened chocolate. Let cool.
· Cream the butter with 1 cup (packed) light brown sugar and five eggs. Add one teaspoon of pure vanilla extract. Beat in the melted, cooled chocolate and one cup of plain flour.
· Spread into a buttered 23 x 33cm baking pan. Bake 20-30 minutes.
Makes: about 24 large brownies.

Stan's Famous Brownies
Given the number of burrito-munchers who've eaten these brownies at the many Taco Bill's restaurants in which American Stan Teschke has an interest, the "famous" claim is hard to dispute.
INGREDIENTS
1 cup unsalted butter
1 cup cocoa
2 cups sugar
4 large eggs
1 cup flour
1 cup chopped walnuts
1 tsp vanilla essence
1/4 tsp salt
METHOD
· Preheat oven to 180C.
· Melt butter in double boiler, stir in cocoa. Remove from heat, then stir in sugar.
· Break eggs into mixture one at a time, then add flour and stir to combine.
· Add walnuts, vanilla and salt and stir to combine all ingredients.
· Pour into greased and lightly floured 18cm x 28cm baking tray.
· Bake for about 20-25 minutes.
Do not overcook.
Makes: about 18 large brownies.
Frosting
6 tbsp butter, melted
½ cup cocoa
1/4 cup strong coffee
2 cups icing sugar
Combine all ingredients. Ice brownies while still warm.
Cashew Blondies
This blondie recipe comes from an American website called www.recipegoldmine.com. Blondie recipes are built on the simple combination of butter, sugar, flour and eggs, but this one is embellished with cashews and white chocolate. Pecans would be a good substitute for the cashews.
INGREDIENTS
2 eggs
2/3 cup granulated sugar
1 tsp vanilla extract
225g white baking chocolate, melted and cooled
1/3 cup butter or margarine, melted
1½ cups plain flour
1½ tsp baking powder
1/4 tsp salt
½ to 1 cup chopped salted cashews or pecans
METHOD
· Preheat oven to 180C.
· In a mixing bowl, beat eggs, sugar and vanilla extract on medium speed for one minute.
· Beat in chocolate and butter.
· Combine flour, baking powder and salt; gradually add to chocolate mixture. Stir in cashews. Spread into a greased 23cm-square baking pan.
· Bake for 25 to 30 minutes or until a wooden toothpick inserted near the centre comes out clean. Cool on a wire rack. Cut into bars.
Makes: about 16 large brownies.
