Wholemeal Apple Tea Cake
Serves 4-6
Degree of difficulty: Low
Cooking Time: 25-30 mins
You need:
60g (2oz) Margarine
60g (2oz) brown sugar
1 egg
4 tablespoons milk
lemon essence
125g (4 oz) wholemeal SR flour, sifted
salt
1 apple, peeled and sliced
3/4 teaspoon cinnamon
1 tablespoon castor sugar/superfine sugar
Method:
Grease a 7" tin, Heat oven to 190 (375F). Cream butter and brown sugar. Add egg and beat well. Mix in milk, essence, flour and salt. Place in tin. Arrange apple slices on top. Sprinkle with cinnamon and sugar. Bake 25-30 mins.

Zucchini and Yoghurt Cake
Who would of ever thought a zucchini and yoghurt cake !!!! try this cake and you'll be surprised.
Serves Makes 2 Loaves
Degree of difficulty: Medium
Preparation Time: 10 minutes
Cooking Time: 50 minutes
You need:
60 g butter
¾ cup sugar
3 eggs
1 cup yoghurt
1 ½ cups wholemeal SR flour
1 ½ cups SR flour
2 cups coarsely grated zucchini (approx. 1 medium zucchini)
1 cup sultanas
¼ cup sunflower seeds
Method:
In a large bowl, cream the butter and sugar. Beat in eggs one at a time. Add yoghurt. Fold in flour, zucchini and sultanas. Mix well. Divide into 2 lightly greased loaf tins. Sprinkle with sunflower seeds. Bake at 180ºC for 50 minutes.
Serving Suggestion: Serve warm.
Leftover Potential: If there is any leftovers, store in the fridge covered in cling wrap.

Wholemeal Pecan Carrot Cake
Ingredients
1 cup wholemeal plain flour/all purpose flour
1 tspn bicarbonate soda/baking soda
1 tspn cinnamon
1 cup sultanas/golden raisins
1 ½ cups finely grated carrot, lightly packed (approx. 2 medium carrots)
1 cup raw sugar or normal sugar
1 cup chopped Pecans
2 eggs
½ cup maize or sunflower oil or other oils
Method
Sift flour, soda and cinnamon into a basin and return husks to basin. Add sultanas and carrot, Pecans and sugar and mix well. Beat eggs and oil together with a fork and add to well in centre of dry ingredients. Beat well. Spread mixture into a well greased 28 x 18cm lamington tin. (A deeper than jelly roll tin)
Bake in a moderate oven (350oF) approx. 40 minutes or until cooked when tested.
Let stand in tin 5-10 minutes before turning onto a wire rack to cool.
