Curried Sweet Potato&Orange Soup with grilled peaches A sweet and spicy soup.
Serves: 4
1 onion, finely chopped 1 tsp curry powder 3 cup water 1 cup skim milk 2 tsp fresh coriander, chopped 1 orange rind, grated 1 Tbsp brown sugar 2 peaches, cut into wedges 1/2 oz butter 1 lb sweet potato, peeled and chopped
Melt butter in saucepan and saute onion until tender. Add curry powder and sweet potato and cook for 1 minute. Add water and season, simmer, covered for 15-20 minutes or until tender. Puree mixture until smooth and place into a clean saucepan. Add milk, coriander and orange rind and re-heat until heated through. Sprinkle sugar over peaches and grill until caramelised. Serve soup topped with peach and extra orange rind.
