Serves: 8 Yield: 8 - 1 cup servings
A lighter version of the old favorite.
2 cup chopped cabbage 1 can (14.5 oz) diced tomatoes 1 can (7 oz) mushrooms, stems and pieces, liquid included 1 cup chopped frozen spinach 3 small stalks celery 1 can (14.5 oz) French style green beans, liquid included 1 box onion soup mix 3 cup water
Put all ingredients into a large soup pot; bring to a boil. Reduce heat to a gentle boil; cook an additional hour.
