Pea & Ham Soup Empty 250 g green or yellow split peas into a pot, add a pinch of bicarbonate of soda/baking soda and cover with boiling water for 30 minutes, then rinse well under cold running water. Stir-fry 1 diced onion, 2 diced carrots and 2 diced stalks of celery. Add peas, 1 smoked meaty ham hock, 3 litre beef or chicken stock and 1 handful of mint leaves. Simmer for 3 hours. Cool. Remove hock and take meat off the bone, set aside. Blend soup with 1 heaped tablespoon of sour cream and add meat. Serve with fresh bread – yummy!
