We used carob frequently when I was a teenager. Maybe I need to get back to it.

"Dessert: Carob Cake 1 3/4 cups whole wheat pastry or white flour 3 TB roasted carob flour, sifted 1/2 tsp sea salt 2 Tbs non aluminum baking powder 1/3 cup oil 2/3 cup maple syrup 1 tsp vanilla 3/4 cup soymilk 1. Preheat oven to 375 degrees. Oil bottom of 8" square or round cake pan. 2. Combine dry ingredients in a bowl. 3. Combine wet ingredients in a bowl. 4. Add wet to dry and mix well. 5. Pour into cake pan. Bake 30-40 minutes (until toothpick comes out clean). 6. Top still hot cake with enough semisweet choc chips to cover.
