I have my original recipe that I haven't revisited for a long time, I know they were very nice though.
There are four flavours.
Apple Cakes
2 cups self-rising flour 3/4 cup sugar 1 teas cinnamon 4oz softened butter or substitute 3 eggs 1/4 cup milk 1/2 teas vanilla essence 1 tab lemon juice 1 apple
Sift dry ingredients into small basin of electric mixer, add softened butter, eggs, milk, vanilla and lemon juice. Beat on medium speed 2 minutes. Add peeled, grated apple, beat further 1 minute. Drop tablespoonfuls of mixture into deep greased patty tins, bake in moderately hot oven 12 to 15 mins or until golden brown.
For fairy cakes (which is what we call them here) use a sharp knife to cut small circle from centre of each patty (cup) cake. Cut circle about 5mm (1/4") in from edge of cake, and cut down 1cm (1/2") into the cake. For butterfly cakes, cut rounds from cakes, as directed for fairy cakes, then cut each round in half, to represent wings.
Half a teaspoon of jam (jelly) or lemon butter can be spooned into the cakes, then whipped cream; or use any of the special fillings we give here. Place in position the small rounds of cake, or the wings. Dust cakes, if desired, with a little sifted icing sugar. (Powdered sugar) Each recipe makes about 24 cakes.

Chocolate Cakes

Chocolate Cream 90g (3oz) butter or substitute 1 1/4 cups icing sugar 2 teas cocoa 1/2 teas vanilla 1 1/2 tabs milk
Sift dry ingredients into small basin of electric mixer, add softened butter, eggs, milk and vanilla. Beat on medium speed 2 minutes. Add melted chocolate, beat further 1 minute or beat with wooden spoon until smooth. Drop tablespoonfuls of mixture into deep, greased patty tins, bake in moderately hot overn 12 to 15 minutes or until cooked.
Chocolate Cream: Cream butter, sifted icing sugar and cocoa until light and fluffy. Add vanilla, gradually add milk; beat well.

Golden Raisin Cakes
2 cups self-rising flour 3/4 cup sugar 4oz softened butter or substitute 3 eggs 1/4 cup milk 1/2 teas vanilla 4oz golden raisins 2 tabs chopped mixed peel (not sure what you call this)
Cinnamon Cream
3oz butter or substitute 3/4 cup icing or powdered sugar 1 teas cinnamon 1 teas grated lemon rind 2 tabs milk
Sift dry ingredients into small basin of electric mixer, add softened butter, eggs, milk and vanilla. Beat on medium speed 2 minutes. Add sultanas and chopped mixed peel, beat further 1 minute, or beat with wooden spoon until mixture is smooth. Drop tablespoonfuls of mixture into deep well-greased patty tins, bake in moderately hot oven 12 to 15 minutes or until golden brown.
Cinnamon Cream: Cream butter and sifted icing sugar until light and fluffy, add cinnamon and lemon rind, gradually add milk; beat well.

This is another patty cake recipe from my old book that I made.
Basic Patty Cakes
4oz butter or substitute 2/3 cup superfine sugar 1 teas vanilla 2 eggs 2 cups self-rising flour 1/3 cup milk
Beat butter and vanilla until white, add sugar, beat until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in sifted flour alternately with milk. Drop teaspoons of mixture into greased deep patty pans or paper cake containers. Bake in moderate oven approx. 15 minutes.
Coffee Variation:
Add 1 tab instant coffee powder to butter when creaming. Top with coffee glace icing when cold; if desired, top cakes with walnut halves.
Quick Patty Cakes
2 cups self-rising flour 3/4 cup superfine sugar 4oz softened butter or substitute 3 eggs 1/4 cup milk 1/2 teas vanilla
Sift dry ingredients into small basin of electric mixer, add softened butter, lightly beaten eggs, milk and vanilla. Beat on slow speed to combine ingredients, increase speed to medium, beat 3 minutes, or until mixture is smooth and changes color. Drop teaspoonfuls of mixture into greased deep patty pans or paper cake containers. Bake in moderate oven approx. 15 minutes.
Fairy Cakes
1oz butter or substitue 2 tabs sugar 1 egg 4 tabs plain flour (all purpose) 4 tabs cornflour or cornstarch 1 teas baking powder 1 tab grated lemon rind
Cream together butter and sugar, add lightly beaten egg, beat well. Fold in sifted dry ingredients and grated lemon rind. Place teaspoonfuls of mixture into greased shallow patty tins. Bake in moderate oven 12 to 15 mins or until cakes are golden brown. If desired, ice with lemon icing. Makes approx. 12.
