I found this great recipe for hazelnuts that seems to be low fat. Hazelnut and honey muffinsDegree of difficulty: Low You need: 175g plain wholemeal flour 1 tablespoon baking powder 205g rolled oats 1/2 teaspoon bicarb soda (baking soda) pinch salt 1/2 teaspoon cinnamon 1 egg 175g plain yoghurt 150g honey 1 teaspoon vanilla extract 4 tablespoon oil (macadamia oil is nice) 225 coarsely chopped roasted hazelnuts Method: Preheat oven to 160 degrees centigrade. In a large mixing bowl, combine the dry ingredients. In another bowl, whisk together egg, oil, yoghurt, honey and vanilla. Fold the wet and dry ingredients together and add the hazelnuts. Do not overmix! Place in muffin tins and bake for 20 mins until golden and springing back when pressed lightly. (These reheat and serve well). From: www.abc.net.au/brisbane/stories/s1657612.htm

Hazelnut PralinesPerhaps the biggest problem with pralines is that they are just too easy to make. Add the fact that you're likely to find most of the ingredients to make them in your kitchen cupboard at any given time and it becomes even more difficult to resist temptation. But you'll have to rely on your own will power, because this recipe is too good not to share. INGREDIENTS: * 1/2 cup sugar * water to cover * 1 tablespoon butter * 1/2 cup hazelnuts * 1/2 teaspoon vanilla DIRECTIONS: 1. Bring sugar and water to a boil in a heavy-bottomed, covered saucepan. 2. Remove the cover and cook to a light caramel colour without stirring. 3. Add butter and hazelnuts. Stir and cook to a medium caramel colour. 4. Add vanilla.
