It's a fave here, I often use ciabatta rolls. They're as hard as bricks but with a more open texture than bread inside. I split them, toss them cut side down in a frying pan that has some hot olive oil in it, then turn them over, cook for a minute or two while I put some baby spinach, cheese (sliced tasty for the boys, bocconcini for dd), sliced tomato and a sprinkle of basil, the I put the whole thing under the griller until the cheese melts. Yum, five minutes and you have something that's basically a cheese and tomato sandwich but looks special!

I think the bocconcini might trip me up, I will have a look for it in the supermarket. It is possibly not there.
