I was hoping there would be some good summer entertaining recipes there. There might be.
Today I noticed a recipe for homemade mayonnaise in my magazine. I noticed you can then turn it into aioli with the addition of garlic. Sounds good. They used mustard powder to make it but also said you can make mayo from ready made mustard in a jar.
2 large egg yolks, at room temperature 1 tsp Dijon mustard or mustard powder 1 tabs lemon juice, plus a little extra, to taste 175ml vegetable oil 100ml olive oil
Flavours: Aioli Stir 2 cloves finely chopped garlic through completed mayonnaise.
Place egg yolks, mustard, lemon juice and a good pinch of salt into a bowl, preferably one with a narrow base. Using a hand whisk, beat ingredients until well blended.
Start adding combined oils to egg yolks, a few drops at a time, whisking well after each addition. Once mixture starts to thicken, you can start slowly pouring in the oil in a thin, steady stream, whisking continuously.
When all the oil has been added, check the taste and consistency of mayonnaise. Lasts for one week in airtight container.
Now, I see aioli in the shops, please share your uses for it.
