We had mandarian chicken salad. After my visit to the doctor yesterday and some not so good test results, I am on a much stricter diet than even before. Thankfully dh will eat what I have to eat, so no double cooking. Thanks, honey..one of the reasons I love him so much..

He sounds lovely Caroline. My dh has been eating everything, but last night we just asked quietly if I was trying to make him skinny. We had spring rolls made with feta, chicken soup from a can and sweet potato. A little like Lynn's menu. www.campbellsoup.com.au/kitchen/recipe_detail.aspx?id=89 We had a salad with oranges the other day. It was nice to cut into them and eat them. In Australia often people used to peel oranges and slice them onto the plate. It was a quick way to find another vegie or item to put on a salad plate with the meat. Another was hard boiled eggs, just things a country farmhouse usually had on hand. Most people had an orange tree. I was thinking the other day that any salad with oranges in it usually tastes nice. I think I had a nice mandarin one as well.
