One of my Mum's great fall back meals is curried sausages. I guess by sausages I mean links.
I am not exactly sure how she makes it except usually it has apples and sultanas and is boiled.
I found this modern version today.
Curried Sausages Serves 4
INGREDIENTS 12 sausages, grilled 1 large onion, finely sliced 1 ½ tablespoons oil 2 tablespoons fruit chutney 1 ½ cups mild curry sauce 1 tablespoon plain flour 1 tablespoon butter Salt and pepper Chopped coriander or basil
METHOD In a nonstick pan fry the onions in the oil until lightly browned. Add the fruit chutney and curry sauce and simmer for 5-7 minutes. Mash the flour into the butter and stir into the sauce to thicken. Season to taste and add the sausages. Warm in the sauce, then stir in the herbs. Serve with rice, mashed potatoes or mashed sweet potato, and extra fruit chutney.
