Tonight we had pinto beans, greens, fried taters, corn bread, fried apples, sliced maters and onions.
Real hillbilly dinner for us. Yum..

We had the most amazing French Dip sandwiches ever, with french fries and cantalope from the neighbors garden.Gracie made brownies for dessert.

Gracie is good isn't she? Just by making a few baked things this year, that seemed to be similar Amelia, three seems to have picked up a few cooking skills. I am really happy about that. She can grease trays and participate, which I am sure she would love.
Carolyn I have learnt to make a cornbread that I am happy with and recently bought some greens seeds. Not sure how they will go, do you plant them in spring with the other things. Mine are collards and I am surprised they are like cabbage type things. I also bought okra seeds too and will wait until it is nearly summer before planting those.
My Grandfather was big into sliced tomatoes and onions I think, that was awhile ago.
I will be plaguing everyone with information about greens and okra in the coming months I am sure.
Last night we had a stew made with beef, tomato paste, carrots, baby onions, flat leafed parsley, and served with a parsnip and potato mash with butter and milk in it. The flavours blended well together, the kids didn't catch on to the parsnip and ate it all up. The idea came from a magazine and was thoroughly enjoyed.

Car, how do you make your pinto beans? (or any other beans for that matter? LOL) I need to incorporate more into our diet and cut back on meats, neither one of us are getting any younger.
