" Quark (curd cheese, baker's cheese) is the continental ingredient for cheese cakes and fruit dumplings. If you do not find it in your supermarket: You can order Vermont Butter & Cheese Quark via amazon.com or make it yourself from buttermilk. Home made quark recipeFor ca. 500 g (approx. 1 pound) quark take 2.25 liters (approx. 0.6 US gallons / 4 Imperial pints of buttermilk or 2 liters of milk (approx. 0.5 US gallons / 3.5 Imperial pints) and six tablespoons of buttermilk, warm up your oven to 150 degrees Fahrenheit (65 degrees Celsius, warm) and leave the buttermilk (milk/buttermilk) in the oven for 12 hours. Line a colander with a clean large linen kitchen towel, pour the warm buttermilk (milk/buttermilk mixture) into the towel, knot the towel, hang over sink or bowl and let drip for 6-8 hours.
