This seems very close to the story I have heard about my GGrandma making bread for her 14 children. I was told potato peels but there was also corks in the story.
Acid Yeast
1 medium potato 1 1/2 tablespoons sugar 1/2 teaspoon citric or tartaric acid 1 cup warm water 2 teaspoons flour
Cooking time: approx. 15 minutes
Boil and mash potato, add all ingredients and sufficient water to keep mixture at a cup full. Bottle or put in a jar and cork tightly. Keep in a warm place. 12 hours in an old yeast jar, if not 24 hours at least in a new jar.
