Kransky PastaDegree of difficulty: Low Preparation Time: 15 minutes Cooking Time: 10 minutes You need: 500 gm of pasta (spaghetti works well) One large brown onion (diced) One red chili (sliced) Kransky sausage or likewise (chorizo or any variety of boiled sausage) 150 gm of fresh Pecorino 50 gm of grated Parmesan 50 gm of rocket One lemon Olive oil Salt and pepper Method: Bring to the boil a large pot of water and add a pinch of salt and a splash of olive oil (as this will prevent pasta from sticking together). Once the water is boiling profusely add the pasta and cook until al-dente (to-the-bite). While the pasta cooks, prepare the sauce. To do this, simply brown off the onion in a large fry pan with a splash of oil, add the chili, kransky and cook until the sausage is browned off. Once the pasta has cooked, drain it and return to the pot in which it was cooked. Add the contents of the fry pan and mix through the pasta thoroughly. Add a squeeze of lemon juice, a splash of olive oil and some salt and pepper. Finally, add the Pecorino, Parmesan, rocket and another splash of olive oil, give it a quick stir and serve immediately.
