Spiced hot chocolatePreparation Time 5 minutes Cooking Time 10 minutes Ingredients (serves 8) * 1.5L (6 cups) milk * 2 x 7cm cinnamon sticks, lightly crushed * 150g good-quality dark chocolate, finely chopped * 250ml (1 cup) thin cream * Sugar, to taste * Ground cinnamon, to dust Method 1. Place the milk and cinnamon in a large saucepan and bring to a simmer over low heat. Simmer for 1 minute. Remove from heat. Discard the cinnamon sticks. Add the chocolate and stir until chocolate melts and mixture is smooth. 2. Use an electric beater to whisk the cream in a bowl until soft peaks form. Pour the hot chocolate among serving cups. Add sugar to taste. Place a dollop of cream on each hot chocolate and sprinkle with cinnamon. Notes & tips Make the hot chocolate just before serving.
