4 boneless, skinless chicken breasts 1 Tbsp. grated fresh ginger root 1/2 cup apricot preserves 1/3 cup Italian salad dressing
Combine all ingredients in large zip lock bag. Squish bag to mix; refrigerate at least 2 hours, up to 24 hours. When ready to cook place chicken in baking dish reserve marinade. Bake at 350 degrees F. for 25-30 minutes until chicken is thoroughly cooked ~ basting occasionally with marinade. Discard remaining marinade. Serves 4

You can also try apricot nectar, one packet of onion soup mix, chicken pieces and bake.
