chicken with red wine and capers 6 chicken thighs 1 green pepper diced 1 med onion diced 2T capers 1 can diced tomatoes 1 c red wine 1 tsp orgenano 1 tsp garlic and herbs mcgormic 1 c slice fresh mushroom 3/4 c rice 2 T olive oil In a brasing pan brown the thighs in oil take them out. Set aside, Saute the onions and pepper until slighty soft side aside Add the wine and deglaze the pan. Add the tomatoes herbs and capers and mushroom. Add the chicken and veggies and rice. Simmer for a few minutes. Bake at 350°F for 30 minutes or til chicken is no longer pink
