Here is a recipe from our friend, John. He makes this in a cast iron dutch oven, but we've made it in a 9x13 inch casserole dish..tastes good the next day, too! You could make it a main dish by adding diced or julienne ham or maybe some shredded chicken...sausage, perhaps?
John's Potato Dish (3) 10 ounces bags of shredded potatoes 1 can cream of mushroom soup 12 ounces sour cream 1/2 cup melted butter 1/2 cup diced onions 2 cups shredded cheddar cheese 1 tsp. salt and pepper
Mix all together , putting crushed cornflakes or potato chips on top, spot with more butter. Bake for 50 minutes on 350 degrees.
