l cup sugar 1/2-cup apple cider vinegar 1/2-cup beet juice (drained from canned beets) 1/2 teaspoon mustard seeds 1/2-teaspoon celery seeds 2 cans beets drained (or fresh cooked and sliced) Sliced onions (optional)
Combine first 5 ingredients in a small saucepan; bring to a boil, stirring constantly, until sugar dissolves. Remove from heat. Pour over beets, stirring gently. Cover and refrigerate at least four hours.
Note: This dressing is also good on a 16-ounce package of broccoli slaw mix or cucumber and onions, substituting water in place of beet juice.

My mom used to can the best pickled beets. I think she used my grandma's recipe. I'll have to ask her if she remembers it. I know hers had beets and onions in it, but other than vinegar, I don't remember the spices.
