Spicy Black Bean and Sausage Chili Serves 6 1 tab vegetable oil 1 large onion, chopped 1 medium green bell pepper, seeded and diced 1lb or less Hans Tijuana chicken, or Rookwurst or chorizo (thinly sliced) 2 cans or 30oz black beans, drained 28oz canned tomatoes 1/4 teaspoon chili powder or less 1 clove garlic, crushed or finely grated 1/4 teaspoon ground cummin 1/2 teaspoon coriander or cilantro 1 cup water and 2 buillion or stock cubes 1/2 teaspoon salt 1/2 teaspoon dried oregano Heat the oil in a large dep pan over medium. Add the onion and cook until light brown, about 7 minutes, add garlic and green pepper and cook 1 minute. Stir in the salsa ingredients, sausage, beans and tomatoes. Simmer over medium-low heat, stirring often, for about 30 minutes. Serve in warm bowls thickened with garnishes or unthickened with cornbread. My son bought me some in Canberra last time. I enjoyed them. They were in cans. I plan to get some more.
