Serves: 4
1 ¼ pounds Brussels Sprouts ½ pound carrots, julienne sliced 1/3 cup orange juice, calcium added 1 tsp cornstarch 1/8 tsp ground cinnamon 1/8 tsp ground nutmeg
Cut the Brussels sprouts in half and place in a large glass bowl with the carrots. Cover and microwave with 2 tablespoons of water for 5 to 8 minutes or until crisp-tender. Side aside. In a small bowl stir together the orange juice, cornstarch and spices. Microwave the mixture until thickened and bubbly. Stir the mixture and pour over the vegetables. Cover and micro-cook for 1 minute more. Serve immediately. Makes 4 servings.
