½ lb ground beef 2 cup chopped celery 2 cups thinly sliced potatoes 1 can red kidney beans 1-1/4 cups beef stock or water 1-1/2 cup chopped onion 2 tsp chili powder 1/3 cup uncooked rice 1 can tomato soup
Cook beef until it starts changing colors, add celery, chili powder, onion. Cook until mixture is browned, drain grease. Add potatoes, rice, undrained can of kidney beans, tomato soup, water or stock. Bring to a boil. Pour into a 3 quart casserole. Cover and bake at 350°F for 40 minutes
