Frozen spinach can contain 4 times more vitamin C than fresh.
1 box (12-oz) frozen, chopped spinach 1/4 cup chopped onion 2 eggs, well beaten 2 Tbsp grated Parmesan cheese 1 cup milk 1/2 tsp salt 1/3 cup chopped celery 1/2 tsp ground nutmeg Thaw frozen spinach and press out liquid. Mix remaining ingredients together, fold in spinach, and pour into a greased 9 inch pie pan. Bake at 375° F for 45 minutes (or until a knife inserted in the middle comes out clean). Cut into wedges and serve warm.

I love that sort of pie, especially with feta and ricotta cheese and philo pastry.
