Beetroot Relish
1kg (around 2lb) beetroot/beets 1 cup sugar 1 tsp allspice 1 tabs all purpose flour 750g onions, chopped 1 tbs salt 2 cups brown vinegar
Peel beetroot and chop roughly. Process beetroot and onions in several batches until finely chopped. Combine beetroot and onion mixture with sugar, salt, allspice and 1 1/2 cups of the vinegar in a large saucepan, bring to the boil and simmer, uncovered, for 30 minutes. Blend flour with remaining vinegar, add to beetroot mixture, stir over medium heat until mixture boils and thickens. Pour into hot, sterilised jars, seal when cold.
