12 red Bliss potatoes 1 tablespoon olive oil salt and pepper to taste 2 tablespoons chopped parsley
Preheat the oven to 350°F.<br>Wash the potatoes and cut them in quartered. Toss with the olive oil and a generous amount of salt and pepper. Roast in the oven until tender, about 20 minutes. (Large potatoes will take longer.) Sprinkle with parsley and serve.
