1 large head broccoli (about 1-1/2 pounds) 3/4 cup light sour cream 1/4 cup Parmesan cheese, grated 3 tablespoons butter or margarine 1/2 cup bread crumbs 1/2 cup Swiss cheese, shredded
Trim the broccoli; cut into 1-inch florets. Peel stalks; cut into 1-inch chunks. In a medium saucepan, bring 1-inch of water to a boil over high heat. Add the broccoli stalks; cover and cook for 2 minutes. Add the florets; cover and cook until crisp-tender, about 5 minutes. Drain; keep warm. In a large bowl, combine the sour cream and Parmesan; mix well. In a skillet, melt the butter over medium heat. Add the bread crumbs and stir until coated with butter and toasted. Preheat the broiler. Toss the broccoli with the sour cream mixture until coated. Turn into a shallow baking dish. Sprinkle with the bread crumbs and Swiss cheese. Broil 5-inches from the heat source until cheese melts. Serves 4 to 6
