SPINACH SOUFFLÉ 1 lb. fresh spinach or 1 (10 oz.) pkg. frozen spinach,thawed 2 tbsps. butter 1 cup chopped onions ½ pint yogurt or sour cream 4 oz. cheese (any flavor) 3 eggs. beaten 1 tbsp. Worcestershire sauce Cook fresh spinach and drain well. Thaw frozen spinach and squeeze out water. Sauté onions in butter until brown. Combine all ingredients in 12x9 baking dish. Bake at 350°F for 40 minutes or till eggs are set and mixture is firm. Serves 6 generously
