Rice Casserole 3/4 lb. Monterey Jack cheese 1-1/2 C. sour cream 1 small can diced green chilies (or less to your taste) 3 C. cooked rice 1/2 to 3/4 C. grated Cheddar cheese Salt and pepper to taste Cut Jack cheese into strips. Mix sour cream and chilies. Butter a 1-1/2 qt. casserole well. Salt and pepper rice to taste. Layer rice, sour cream and chilies, Jack cheese three times. Bake at 350°F. for 1/2 hour. Sprinkle grated cheese over the top during the last few minutes of baking. Serves 6 to 8.
