Spanish Rice with Chickpeas, Pumpkin & Chorizos This is a hearty dish that needs only a big green salad to make it into a complete meal. Ingredients 4 tablespoons extra virgin olive oil 1 onion, finely chopped 1 small carrot, finely chopped 1 stick celery, finely chopped 4 cloves garlic, finely chopped 1/2 teaspoon ground turmeric 1 cinnamon stick 350g seeded, peeled, 3cm diced pumpkin 1 cup thinly sliced spicy chorizo sausage 300g can chickpeas, well rinsed and drained 11/2 cups calasparra rice 6 cups chicken stock, brought to the boil salt and freshly ground black pepper Method Heat the oil over moderate heat and add the onion, carrot, celery, garlic, turmeric, cinnamon stick and pumpkin. Fry everything gently, without browning, until the onion is soft. Add the chorizo, chickpeas and rice and mix well. Add the stock, bring to the boil while stirring continuously.Once boiling stop stirring and turn down the heat. Simmer for 15 minutes until the rice is tender.
