Seems an unusual recipe, but probably delicious. Sweet Potato and Mushroom Irish StewServes: 4 Preparation time: more than 30 minutes Serves: 4 Preparation time: more than 30 minutes Sweet and curried, this lamb dish reminds me of Nana's Irish stew and has a lovely thick texture and a hint of curry. Ingredients 1 tablespoon oil 2-5 cloves garlic 1 tablespoon curry powder 1 tablespoon Peri Peri sauce or ½ teaspoon tabasco sauce Salt and cracked black pepper, to taste 4 BBQ lamb forequarter chops, fat trimmed 1 onion 1 x 400 g tin mushrooms in butter sauce 2-3 rashers bacon, chopped 125 mL white wine 300 g sweet potato Method 1. Heat the oil and add curry powder, sauce, salt and pepper. 2. Saute lightly. 3. Add the lamb and brown, then add chopped onion and saute until translucent. 4. Add mushrooms, bacon and white wine. 5. Bring to the boil, then add sweet potato and reduce heat to low, making sure potato is immersed. 6. Simmer for 1 hour or until meat falls off the bone. 7. Serve alone, with mashed potatoes or rice. Recipe notes I have a grinder full of curry powder, ground coriander, cracked peppers, cumin and chilli, and I use 1-2 tablespoons of this mix instead of curry powder. This is so sweet and moreish. Don't be worried if the sweet potato turns into mush - this adds the thickness and sweetness this dish enjoys so much.
