Asado (Beef Ribs on the Barbeque) Serves 6-8 Ingredients 2.5-3 kg beef ribs 1 teaspoon finely chopped continental (flat leaf) parsley (save some other parsley for garnish) 3-4 tablespoons finely chopped fresh garlic 2-3 tablespoons balsamic vinegar 1-1½ cups olive oil ½ tablespoon dried chilli 1 teaspoon dried oregano 250 mL white wine Method To make marinade, mix the parsley with the garlic. Add the vinegar and olive oil. Mix in dried herbs. (Secret – Dried herbs are better because they don’t burn in the meat.) Add white wine, remaining parsley, and salt. Spread marinade over the beef ribs on both sides and allow to stand for about 1 hour in the refrigerator. Barbeque bone side down. From: www.abc.net.au/secretrecipes/families/argent4.htm
